Oven Baked Duck

There is nothing like the taste of fresh baked duck and the sweet aroma that wafts through the whole house. This is the first time that I have baked duck and it a was semi successful effort.

Duck is a game animal and has a very thick fatty skin which is great for us Paleo consumers. In this recipe I used an oven bag to make sure that all the juices were kept in and also to stop from making any mess inside the oven.I have had peking duck once or twice in my lifetime from an Asian restaurant but generally is was mostly bones and not much meat in the dish to my disappointment. So I thought what better way than to bake and eat my own whole duck.

The duck came out a little dry and next time I might throw it in a slow cooker and let it tenderize until it just falls off the bone. YUM!

INGREDIENTS:
  • 1 Duck
  • Butter
  • Onion
  • Salt and Pepper
  • Olive Oil
Brush the duck with the butter then throw the remaining ingredients into the bag and bake for 60 minutes. I don't like to give specific oven temperatures because everyone's oven is different and I don't want to ruin anyone's duck.

Service with steamed asparagus and enjoy.
